Introduction

Great for a Sunday breakfast with the family. Everyone is going to look forward to this when you add it to your menu! Great for a Sunday breakfast with the family. Everyone is going to look forward to this when you add it to your menu!

Ingredients

    1 bag frozen southern style hash browns
    2 boxes of precooked bacon (cut into pieces)
    2 cups shredded cheddar cheese
    8oz ground pork sausage
    24oz Low fat Cottage Cheese
    7 Eggs (Beaten)

Tips

I am going to try turkey sausage, turkey bacon, & 2% cheddar cheese next time I make this.


Directions

Cook sausage, drain, rinse, and set aside to cool. Mix potatoes and cottage cheese together. Add shredded cheese, cooled sausage, and cut up bacon, mix well. Place in a greased 9x11 baking pan (do not pack the mixture down), pour beaten egg mixture over potato mixture and bake at 375 for 55-60 minutes.
