Ingredients

    1 lb Fresh Cod
    1 tablespoon extra virgin olive oil
    Kosher Salt & pepper

    Sauce:
    1 tablespoon Dijon mustard
    1 tablespoon capers, drained
    1 tablespoon extra virgin olive oil
    1 tablespoon water
    1 teaspoon dried tarragon


Directions

1.Rinse and dry fish on a paper towel. Season each side with salt and pepper.

2.Heat 1 tablespoon olive oil over medium heat for about 2 minutes. Add fish and cook about 2-3 minutes. Flip and cook an additional 2-3 minutes. Top fish with sauce and serve.

Sauce
3.In a bowl, mix together mustard, olive oil, water and tarragon. Add capers and stir. Serve over fish.
