Introduction

Ingredients

    .66 cup uncooked brown basmati rice
    2.5 cups water
    .5 tsp salt
    3 lg eggs
    1.5 cups 1% milk
    1 Tbsp coconut sugar
    1 tsp cinnamon

Tips

Rather than light and fluffy, as I like white basmati rice, for this recipe, the brown basmati is better cooked with extra water until quite soft.


Directions

Place rice, water and salt in a saucepan, bring to boil, reduce heat to low and cover. Cook approximately 15 minutes longer than package suggests, or until extra water is absorbed. Spritz a small casserole dish with avocado oil spray (or pam if you wish), and pour in rice. Add cold milk and stir, then add eggs, sugar and cinnamon. Cover the casserole and place in 350 oven for about 30 minutes, or until center is not runny. Remove from oven to cool and finish setting. Eat warm, or bake night before and keep in fridge. Enjoy plain or top with fruit or milk.
