Introduction

Ingredients

1c raw cauliflower, processed
1c mozarella, processed (cheddar or a combination will work as well)
1/3c parmesan cheese
2 eggs
1 tsp onion powder
1 tsp garlic powder
1/2 tsp black pepper
Tips
The key is to let let them cook for about 4-6 minutes per side. Don't try and flip them too soon or they will be stuck ...just be patient.
Directions
Process raw cauliflower in food processor. Set aside in a bowl. Process cheeses (minus parmesan cheese). Pour cauliflower back in processor with cheese and add parmesan. Slightly beet eggs and add seasonings. Blend everything together in food processor. This will produce a thick, dense batter. Put 1/4s scoops into a non-stick preheated waffle iron or a non-stick skillet.

I just found this very recipe on the internet and it is soooo delish! My kids devoured them and were shocked to discover they are made with cauliflower! My son has type 1 diabetes and these make a perfect snack or meal for him too! I am going to try variations too....broccoli, peppers, bacon....yum! - 7/4/15
