Ingredients

    1 eggs, beaten (or 1/4 c eggbeaters)
    3/4 cup skim milk
    1/2 cup unsweetened applesauce
    1 teaspoon vanilla extract
    1/2 cup + 2 Tbls whole wheat flour
    1/2 cup oatmeal
    2 tablespoons wheat germ
    2 teaspoons baking powder
    1-1/2 teaspoons splenda or brown sugar splenda or brown sugar
    1/8 teaspoon salt

Directions

In a large bowl, whisk together the egg, milk, applesauce, and vanilla. Beat in whole wheat flour, oatmeal, wheat germ, baking powder, cinnamon, sugar, and salt until batter is smooth.
Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

    I added cinnamon and think that next time I will add either banana's or something to help cover up the bitterness of the flour and oatmeal. - 3/15/09

    Terrific. I added 1/2 cup of frozen blueberries and a tablespoon of ground flax and it was delicious!! My kids loved it too! - 11/1/08

    on my 2nd try, the waffles stuck in the waffle maker m- a lot - came out by pieces. I got "stuck" and made nice pancakes! It may be fact that my w.m. is not teflon coated, but this is not usually a problem and I have made many good waffle recipes in it. - 10/8/14

    The directions say to add cinnamon, but it is not listed in the ingredients. I wonder how much to add?? - 1/11/11
