Ingredients

    1c Applesauce
    3/4c sugar
    1/2c milk
    1 1/2c carrots grated
    2c oat flour (or any flour)
    1t baking powder
    1/2t baking soda
    1/2t cinnamon, ground

Tips

Top with cream cheese frosting or leave plain. Makes about 44 mini muffins or 24 regular size muffins


Directions

Preheat oven to 400F. Spray muffin tin or line with papers. Add applesauce, splenda, milk and carrots to large mixing bowl. Mix well. Sift flour, baking powder, baking soda, and cinnamon over mixture. Stir until smooth. Spoon batter into cups. Bake on middle shelf until tooth pick inserted comes out clean. 13-20 minutes.
