Ingredients

    one can of drained and rinsed pinto or navy beans


    do not skip the step of rinsing off the beans.

    2 teaspoons of vanilla
    1 teaspoon of spice such as cinnamon or cardamon
    ( I like cardamon)
    1/2 cup plus 2 tablespoons of peanut butter
    1/4 (scant) cup of maple syrup or honey, or agave syrup
    1 teaspoon baking powder
    4 tablespoons of chocolate chips

Tips

This is a very delicious cookie with a lot of protein.... but is best warm. I store them in the freezer, not on the counter. And I microwave them before eating. The


Directions

blend beans up in food processor, then add the peanut butter, vanilla, and honey. Sprinkle in the spices and baking powder and mix thoroughly. roll into balls and press some chocolate chips into each cookie on top.
cook at 350 degrees for ten to 14 minutes. They will not brown up or become crispy.

Serving Size: I think each batch makes 12 cookies or so, depending on size.
