Ingredients

    1 lb chicken breast - cut into small pieces
    1 cup shredded cabbage
    1 sliced green pepper
    1 sliced red pepper
    1 sliced yellow pepper (or orange, doesn't matter)
    2 spanish onions
    3 eggs
    1 cup low sodium chicken broth
    1 tsp olive oil or pam
    3 tbsp soy sauce
    3 cups cooked quinoa (about 1 cup uncooked)
    4 cloves garlic
    2 packages sunbird brand stir fry mix

Directions

use a large pot
brown chicken breast
add garlic and cabbage, stirfry until soft
add peppers and onions and chicken broth - simmer until soft
add cooked quinoa
push all ingredients to side of pot, crack 3 eggs into empty side and scramble.
Add sunbird mixes and soy sauce to top of vegetable side.
When eggs are scrambled, stir the entire pot together.

Serving Size: about 7 - 1 cup servings
