I eat this on it's own but it can be served over a bed of lettuce, wrapped inside a tortilla, or even over tortilla chips like nachos.

Ingredients

1 pound ground extra lean turkey browned
1 1/2 C uncooked quinoa, rinsed
1 can of black beans, drained and rinsed
1 C frozen corn
1 can diced tomatoes
1 small can of green chillies
1/2 C Fresh Salsa
1 tsp minced garlic
1/2 C diced onion
1/2 C sweet bell peppers
1 C water
1 14oz can of enchilada sauce
1 Tbsp chilli powder
1 tsp cumin
Top with cheese, sour cream, cilantro, and green onions if you like!
Directions
1) Brown your turkey if you haven't done that yet.
2) Place turkey in the bottom of the slow cooker then layer the remaining ingredients in one after another.
3) Stir to combine and let cook on high for 3 1/2 hours.
