Introduction

Number of Servings: 6

Ingredients

    Florets from one head cauliflower (about 3 C)
    1 Can Cannellini or other white beans
    1 C cherry tomatoes, halved
    1 small Red Onion, diced
    1 C chopped parsley
    1/4 C olive Oil
    1 T White wine vinegar
    2 t lemon juice
    2 cloves garlic, minced
    salt & pepper to taste

Tips

this can be eaten immediately, but is better when covered and refrigerated overnight. Stir before serving.


Directions

Remove florets from one head cauliflower. Break or chop into small pieces (2-3 times the size of the beans you plan to use). Place in 2 quart or larger mixing bowl.
Add to bowl:
Cherry tomatoes, sliced in half (or quartered if big).
Diced Red Onion
Finely chopped Parsley
Drained and rinsed beans
crushed Garlic
Vinegar
Lemon Juice
Olive Oil
Stir to mix. Taste and adjust seasoning (salt & pepper) as needed.
