Ingredients

    One ghirardelli twilight delight chocolate bar(3.5 oz)
    coconut oil 3.5 oz
    mixed nuts chopped up 3.5oz
    2 tablespoons flax seeds
    2 tablespoons chia seeds
    22 mini cupcake papers from the baking aisle

Tips

I'm lactose and gluten free as well as diabetic and wanted an energy snack to take to swim meets. I invented these last night and boy are they good! Im going to try them at the meet tomorrow-wish me luck. Next variations will try adding cinnamon,ginger,tumeric,and raspberries instead of blueberries. I'll also try using an unsweetened chocolate bar. BTW the twilight bar is the least reactive to my milk allergy that I have found and I am very sensitive. I'm going to stick with this for now. I hope the unsweetened has no milk too.


Directions

melt oil and chocolate bar together in a bowl. I use microwave for 2 minutes but you could use a double boiler. stir to blend and to dissolve all chocolate. coarsely chop nuts and add all ingredients to melted oils and blend. spoon into 22 mini cup cake papers and refrigerate overnight.
