Tips

This freezes exceptionally well, so even if you don't have a family (or do and have a really really big slow cooker) you can make the large pot and portion it out into bowls for lunch meals or easy reheatable dinners.

Directions

1. Start steps 2-4 the night before you want this for dinner
2. Mix first 13 ingredients together in slow cooker, whisking well.
3. Cut beef roast into bite size chunks and throw in the pot
4. Make certain beef is coated by broth and turn on the "Low" setting overnight
5. The next morning (before 9:30 am if you want dinner at 6 pm) cook the spinach well, puree it and the water you cooked it in through a blender until completely smooth. stir into the slow cooker.
6. Do the same thing with the carrots (I microwaved until soft and then pureed) and mix it in. if you are using the food coloring to hide the spinach stir it in now.
7. Wash the gem potatoes and make certain to get them into the slow cooker before 10 am!
8. Turn slow cooker to the "High" setting and cook for 7-8 hours until potatoes are soft all the way through. Stir once every couple of hours if possible; not a big deal if you can't.
9. Serve! this recipe makes an 8 quart slow cooker full, the nutritional info is for the whole pot, so portion as appropriately.
