Ingredients

    2 cups wheat free/gluten free oats
    2 TBSP of brown rice protein powder.
    1 banana
    2 egg whites
    1 cup low fat cottage cheese
    1/4 unsweetened almond milk more if batter too thick
    1 tsp baking sode
    1/2 fresh blueberries

    Makes about 12 3-4 inch pancakes

Tips

I pulse the blueberries so some get broken up ad some are whole. Banana sweetens these. You don't need any syrup.
If you want to add a little something extra try smearing the top with natural sugar free peanut butter.

Directions

Combine everything except the blueberries in a high speed blender. Once blended add more almond milk if too thick.

Stir in blueberries.

Heat frying pan with 1 tsp olive oil over med heat.
Cook just like normal pancakes. Flip when bubbles start to appear on the top.

Store in an airtight continuer in the fridge for up to 3 days.
Grab n go as a healthy high protein snack.
