Introduction

This is a great healthy meal. I serve on pita but also a great appetizer served on sliced baquettes with olive oil toasted in oven This is a great healthy meal. I serve on pita but also a great appetizer served on sliced baquettes with olive oil toasted in oven
Number of Servings: 6

Ingredients

    1 medium eggplant
    1 medium red pepper
    1 yellow pepper
    5 garlic cloves
    1/2 medium red onion
    4 tbs EVOO
    salt and pepper

Directions

Chop all vegetables in large chunks. Toss with EVOO. Season with salt and pepper. Place on baking sheet and roast in 350 degree oven for 40 min till tender. Put in food processor and process until small chunks remain. Serve warm on a whole wheat pita.
