Ingredients

    half pound ground beef 93% lean
    1 onion chopped
    3 cloves garlic minced
    1 cup frozen peas
    2.3 cup canned or frozen corn (lower sodium if frozen)
    1 14.5 oz can of stewed tomatoes, no salt added
    4 chipotle peppers in adobo sauce
    half cup red lentils
    1 tbsp tomato paste
    1 cup beef broth no sodium added
    i Tbsp curry powder
    1 tsp cinnamon
    half tsp ground cloves
    half tsp ground cumin
    1 Tbsp olive oil

Tips

for softer lentils, cook them separately
substitute chick peas for corn(more authentically Indian)
simmer for as long as you want.
tastes better the next day


Directions

saute onions for 5-8 minutes in olive oil
saute garlic for 1 minute,
add ground beef and brown
add bouillon, tomatoes, tomato paste and spices
bring to gentle boil and add lentils
simmer for 15-20 minutes
add peas and corn and simmer addition 15-20 minutes or until lentils are tender
