Tips

Adjust seasonings to your liking. Adding crushed red pepper to the sausage adds heat but will separate out as the gravy is made.

Directions

Place thawed turkey into pan lightly greased with Pam .
Add seasonings and, using a spatula, mash really well into the ground turkey... then brown it.

With a little bit of turkey juice left in the bottom of the pan, add the milk and bring it to a rolling boil stirring occasionally. Once the milk is boiling, thoroughly mix 3 tablespoons of cornstarch with 2 tablespoons of water, add to the gravy and bring to a boil while stirring continuously until thick. Remove from heat.

Break eggs into a measuring cup (add 1/8 cup of milk to eggs), salt and pepper to taste and add to a warm pan, greased with 1 second of Pam cooking spray. Scramble until firm. Serve warm with gravy.
