I have been eating these cookies at my in-laws, but the full fat and sugar ones. I am hoping to use my own ingredients from home to make a better alternative. Ingredients

    -3 quick cooking oats
    -1/3 C or 5 1/3 T unsweetened Cocoa like Wondercocoa (99% caffeine free)
    -6 heaping t or 2 heaping T Metamucil, Clear & Natural fiber powder
    -1/4 t salt
    - 1 1/2 t vanilla extract

    -3/4 C or 12 T Xagave Organic Raw agave
    -2/3 C or about 10 1/2 T Skippy Natural Super Chunk Peanut Butter
    -1/2 C or 8 T Organic Virgin Coconut oil

Directions

---Line your cookie sheets with parchment or wax paper.

---In a medium sauce pan over medium heat combine your agave, peanut butter, and coconut oil until smooth. Turn off the heat and then add the vanilla.

---Add your dry ingredients: oats, cocoa powder, fiber powder and salt. Mix until combined.

---Scoop onto the trays and then cool in the freezer or fridge until set, at least 15 minutes.

---Store in an airtight container in the fridge or freezer.

Serving Size: Makes 36 servings of 1 cookie each.
