Ingredients

1 bag frozen Herdez Yucatan Blend corn, peppers & black beans
1 bag frozen Birds Eye Steam fresh Southwestern Style Rice/with corn, pepper & onions
1 15 oz. can Simple truth organic black beans
2 tbsp. Kroger Tomato paste
2 tbsp. dried onion flakes ( or chopped onion to taste)
1 1/2 tsp. dried garlic minced ( or fresh to taste)
2 tbsp. Cilantro dried ( or fresh to taste)
1 tsp. salt
1 tbsp. ground red pepper
1 tbsp. dried hot red pepper flakes ( or more for heat)
Juice from 1/2 fresh lime
1 tbsp. butter (Parkay margarine) (opt. for flavor)
1 tbsp. canola oil
1 8 oz. pkg. Kraft Pepper Jack cheese
12 Kroger soft taco size 100% whole wheat tortillas
Tips
I wrapped them in parchment paper, then placed 2 to a small freezer bag. They can be take out and easily microwaved when hungry!!! Each wrap is 321 calories - all good for you calories! A lunch to go and it will keep you satisfied all day till dinner! Don't forget your favorite salsa... these wraps will thank you!
Directions
Add canola oil to large fry pan and heat. Add all ingredients, frozen and spices, except do not add cheese or tortillas.
Heat all ingredients through. In the mean time have another (grilled cast iron) skillet if you have it.. heating on med heat, spray or brush lightly with canola oil.
Dish 1/3 cup of mixture on a tortillas with 2 tbsp. of cheese. Wrap the ends in and roll the sides in. Place folded sided down on the heated skillet to crisp up and get grill marks for a couple min.. then turn and repeat. Serve them up, or put on a shallow pan to cool. They can be placed in freezer bags and frozen for later use.
