Ingredients

    2 T olive oil
    2.5 lbs. chicken tenders
    Favorite seasoning (such as McCormick's Perfect Cajun spice)
    salt and pepper to taste
    2 C favorite salsa (I use Arriba Fire Roasted, Medium)
    1/2 C light sour cream (I use Daisy brand)
    1/2 C cilantro, chopped
    lime wedges

Tips

Great with Mexican white rice (white rice sautéed with garlic in olive oil, then cooked in chicken broth with bit of diced carrots and peas added), and roasted zucchini and yellow squash seasoned to taste.


Directions

Heat olive oil in a large nonstick skillet over medium high heat.

Season the chicken to taste. Cook until golden, about 3 minutes per side; transfer to plate.

Add salsa to skillet and cook on medium heat, stirring, for 2 minutes.

Reduce heat to low; stir in light sour cream.

Return chicken to pan, cover and simmer over low heat for 5 minutes.

Sprinkle with cilantro; serve with lime and rice.
