Ingredients

    1 cup white flour
    1 cup oats - ground as finely as possible
    1/2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 tsp ground cinnamon
    1 large egg
    1 large banana
    1 tsp vanilla
    1 container 6-8 oz blueberry or vanilla yogurt
    1/2 cup skim milk
    1 1/2 cup frozen blueberries

    Preheat oven to 425 and line a muffin tin with papers.
    Combine dry ingredients in a bowl.
    In a separate bowl, beat egg and banana until smooth.
    Add yogurt and milk and mix well.
    Add dry ingredients and blend until fully inbcorporated.
    Fold in blueberries.
    Spoon into muffin papers.
    Bake for 5 minutes at 425, then lower heat to 325 and bake for 10-13 minutes more.

Tips

Can substitute applesauce for banana and gluten-free flour for the flours listed.
