Introduction
This flavorful stir fry is quick, easy, toothsome AND vegan. The portions are plenty, and calories few, and because there's no meat, there's no cholesterol! Sub in any veggies you like. I'm usually lazy and buy stir fry mixes from Whole Foods, but you can sub frozen blends, or whatever you have in your fridge. Enjoy! This flavorful stir fry is quick, easy, toothsome AND vegan. Ingredients

2 Tbsp. tamari
2 Tbsp. mirin (sweetened sake)
2 Tbsp. rice vinegar
2 Tbsp. maple syrup
1 Tbsp. miso
1 tsp. minced garlic
1 tsp. corn starch
8 oz seitan, cut into strips
1 small red bell pepper, cut into strips
1 small green pepper, cut into strips
1 small yellow pepper, cut into strips
1 portabella mushroom cap, cut into strips
1 Tbsp peanut oil
2 Tbsp Earth Balance (soy margarine)
2 cups brown rice, prepared
Directions
Mix the first 7 ingredients in a medium bowl with a whisk until blended. Submerge seitan and let marinate while prepping vegetables.
Heat a large skillet (or a wok, if you have one) over medium-high heat until hot. Add peanut oil and Earth Balance to skillet, heating until Earth Balance is melted. Remove seitan from sauce and add to skillet, cooking until browned (about five minutes). Add vegetables and cook until bright in color (about five minutes). Add sauce and cook, stirring frequently, until thickened and all ingredients are coated.
Remove from heat and serve over rice. Enjoy!
Makes 4 serving. 1/2 cup rice, and about 1 cup of stir fry per serving. I usually do my servings by spreading the stir fry evenly in the skillet, and using a spatula to divide it into fours. Then I just scoop up one serving.
