1/3 cup coconut flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
1/2 TB stevia powder or to taste
2 ripe banana
1 tsp vanilla
2-3 TB Coconut Milk (full fat)
Tips
Using same ingredients I made a cinnamon ginger cookie. Omitted the cocoa powder, increased coconut flour to 1/2 cup, 1tsp cinnamon, 1/4tsp ginger.
Directions
Pre-heat the oven to 350F
In a large bowl stir coconut flour, cocoa powder, baking powder, stevia and salt together with a fork, breaking up any lumps.
In a medium bowl, mash the banana, milk and vanilla and stir well with a fork. For extra smooth treat process this in the blender. Cookie is lighter and makes more cookies.
Add the wet ingredients into the dry and stir well until incorporated. It should be thick, sticking together but not runny, like play dough. If batter is too dry and not sticking together add more coconut milk.
Drop batter by tablespoons onto a cookie sheet prepared with parchment paper. Smoosh them down a bit.
