Ingredients

5.5 LBS. Pork Butt ( cut off the bone and trimmed lean )
1 tbsp. Mesquite Seasoning
1 tbsp. BBQ Seasoning
2 tbsp. Minced Garlic
2 tbsp. Dehydrated Onion
1/2 sleeve. Brat Casing ( you buy these from a butcher )
Tips
For best results make sure you rinse off all of the salt from the brat casings and soak them in water for at least 10 minutes. While you are stuffing the Brats, make sure to keep the Brat casing moist by sprinkling water on the casing that is on the stuffer tube.
Directions
After deboning and trimming as much fat as possible, cut the meat into 1 inch cubes. Put the cubes into a large bowl. Sprinkle the rest of the ingredients over the top making sure to cover the top of all the meat with each seasoning. Mix well with your hand until the seasonings have covered all the meat.
Use a meat grinder/stuffer, place the Brat casing over the stuffer tube. Grind the meat until is starts to come out of the tube. Pull the casing ove the end of the tube and tie a knot in it. Then pull the casing back tight against the tube. Now grind the meat and fill the casing until you have a Brat that is about 4 inches long and 1 inch in diameter. Now pull the casing forward (making sure to keep the meat packed tight) and twist about 5 times. Now pull the loose casing back to being tight on the tube and repeat until all the meat is used up.
Now take a pair of scissors and cut between the brats, package and freeze or use them for a big BBQ .
