    Chicken Breast (cooked), no skin, roasted, 4 ounces
    Olive Oil, 1 1tsp
    1 Med. Green Bell Pepper, .25 serving
    Red Onion Raw (1/4 cup, 40g or 1.4oz), 0.25 cup
    *Clove of Garlic, 1 serving
    *Del Monte Petite Cut Diced Tomatoes, .8 cup
    Oregano, ground, 1 tsp
    Pepper, red or cayenne, .25 tsp
    Pepper, black, 1 dash
    *Brown Rice, medium grain, .1 cup
    Beans, red kidney, .75 cup


3/4 oz = 1/8 cup dry = 1/2 cup cooked brown rice.


1. Heat oil in a small pan over medium heat. Slice chicken breast and saute in pan.
2. Chop bell pepper and onion and mince garlic. Add bell pepper, onion, garlic to pan and cook until softened.
3. Cook brown rice according to package directions.
4. Stir in diced tomatoes with all the juice. Season with oregano, red pepper, and black pepper to taste. Bring to a simmer and add cooked brown rice, and kidney beans. Cook until the rice and beans are warmed through.
