Ingredients

    1 medium head of Cauliflower
    1/4 cup Parmesan cheese grated
    1/4 cup Mozzarella cheese (low fat)
    1 egg
    1/2 to 1 tsp Lawry's Garlic salt
    1/2 to 1 tsp Oregano
    1/2 to 1 tsp dried Basil
    red pepper flakes to taste

    add seasonings to taste

Tips

Cooking time will vary depending on how wet the cauliflower mixture is when it goes in the oven and how crispy or chewy you want your finished cracker. Crispy takes longer to dry out the mixture.

Directions

Pre-heat oven to 450 degrees Cover a cookie sheet with parchment paper. Spray the parchment with cooking spray.

Grate cauliflower in food processor. Put in glass bowl in microwave 5 minutes. Dump cooked cauliflower on a clean dish towel. Let cool when cool enough to touch.Squeeze as much liquid out as you can. The drier it is the less oven time to dry it out.
Once you can't get any more liquid out. Add cooked cauliflower pulp back in the bowl add all other ingredients.

Mix everything together and then spread a thin layer on the parchment. Charlie said 1/8 to 1/4 inch. If you have too much mixture do a second cookie sheet.

When the edges are starting to brown cut with a pizza cutter into any size cracker you want and use a spatula and flip over to brown on the other side.

Serving Size: makes about 40 crackers
