Ingredients

1/2 ranch dressing mix packet
2 tbsp light sour cream
3 oz. plain nonfat Greek yogurt
1/2 cup skim milk
1 tbsp fresh lemon juice
1-2 tbsp all purpose flour
1 minced garlic clove
1/2 cup chopped yellow and/or red bell peppers
1/4 cup chopped mushrooms
1/2 cup sliced or cubed eggplant
1 whole chopped Vidalia or sweet yellow onion
1/4 cup chopped drained fresh tomatoes
1 tbsp basil pesto
3 tbsp olive oil, divided
1 boneless, skinless chicken breast
1 cup Mexican Four Cheeses
1/4 cup mozzarella cheese
12" whole wheat pizza crust
Directions
Blend together the first 7 ingredients. Cook over medium heat, stirring often, until thickened. Remove from heat. Sauce will continue to thicken as it cools.
Heat 2 tbsp of olive oil in skillet. Add peppers, onion, mushrooms and eggplant. Cook until vegetables are tender, stirring occasionally.
Meanwhile, dice chicken breast. Heat remaining olive oil in separate skillet and saute chicken until cooked through.
Toss tomatoes with pesto.
Spray pizza crust with olive oil spray. Spread white sauce over top. Cover with 3/4 of Mexican cheese. Then add cooked vegetables and chicken. Top with tomatoes, remaining Mexican cheese, Parmesan cheese, and mozzarella cheese.
Follow crust directions for baking pizza.
