Ingredients

    2.5 lbs boneless, skinless chicken breast, cut into chunks, 1/2 in
    .5 cup gluten free, low sodium soy sauce
    .25 cup olive oil
    1 tsp salt
    1 tsp black pepper
    2tsp chinese five spice
    2 inches ginger root, matchstick
    1 Tbsp rice wine vinegar
    I large can pineapple chunks in juice
    4 large bell peppers, mix colors', rough chop, 1/2 in chunk
    1 10 oz bag raw carrots, matchstick
    2 medium yellow onions, rough chop, 1/2 in chunks.

Tips

Serve alone as a low carb option.


Directions

Prep chicken, bell peppers, onions, all into same size chunks 1/2 inch pieces, Mix ingredients, soy sauce thru vinegar, whisking together, Pour marinade over chicken chunks only, put in large ziploc bag, store in refridgerator for 2-4 hours. In large bowl, combine marinated chicken including any marinade, bell peppers, onions, carrots, pineapple with juice. Mix until all vegetables are coated and evenly mixed. Pour all together into a large baking dish or dutch oven. ?Bake for 45 minutes at 375 degrees. Make certain all chicken is done through.

Serving Size: approx 1 1/2 to 2 cups cooked
