Introduction

Ingredients

    1 packet plain instant oatmeal
    1 small carrot
    1 small celery stalk
    1/2 small onion
    1 can black beans (approx 1 3/4 cup) drained and rinsed
    1 egg
    1 T bbq sauce

Tips

I use a non-stick belgian waffle maker which holds all the badder at once. If you have a smaller standard waffle iron cook in several batches.

These could also be baked or pan-fried.

If your badder appears dry add an additional egg or extra bbq sauce.

To make vegan just eliminate the egg and be sure your bbq sauce is also vegan.

One serving is 1/4 of the cooked badder. I like my burger on a whole grain bun with lots of lettuce, tomato and onion.


Directions

Pulse the oatmeal packet in a mini food processor just a few times to make smaller pieces. This can also be done by hand. Move to mixing bowl.

Pulse the carrot, celery and onion until chopped to the size of the oats. Do not puree the veggies. Move to mixing bowl.

Pulse the black beans leaving some chunks. This could also be done by smashing with a fork. Move to mixing bowl.

Add the egg and bbq sauce and mix it all together. You should have the consistency of a thick batter.

Spoon the "badder" into your preheated non-stick waffle iron. With oven mitts or pot holders push the lid closed. Be careful there will be a lot of very hot steam!

Allow to cook several minutes, opening the iron too soon will cause your burgers to fall apart. After several minutes carefully check your burgers you want a nice crispy outside with a soft moist center. If they are not ready just close the lid and check again in a few minutes. When the desired crispness is achieved just remove and enjoy.
