Ingredients

1 cauliflower
1 cup grated Gouda cheese (contains important vitamin K2)
½ cup Emmental cheese (or optional)
1 onion
3 tbsp soft cottage cheese (low-fat, or with fat, optional)
150 g bacon
3 sprigs of fresh parsley
A pinch of pepper, as needed
A pinch of salt, as needed
Directions
1. Cut the cauliflower into florets and wash
2. Leave the cauliflower over the steam to soften, about 10-15 min. (the steam allows the cauliflower retain most valuable substances)
3. Blend with the hand blender with the cream cheese, if necessary, add 1-2 tbsp of milk for the right consistency
4. Chop a half of the bacon into cubes and fry gently, then pick up fried bacon and fry the chopped onion on the lard
5. Spread one third of cauliflower puree on the bottom of the baking dish, sprinkle with one third of fried onion and a half of fried bacon, cover with ½ cup of grated Gouda cheese
6. Make another three layers, on the last one sprinkle grated Emmental cheese along with chopped onions, chopped non fried bacon and bake in preheated oven at 190 oC (375 oF)
7. Bake 15 min, or until cheese is melted and slightly toasted with bacon, serve with chopped parsley
