Ingredients

    4 oz of small shrimp (de-veined, de-tailed, raw)
    30g of green bell pepper
    14g of red bell pepper
    24g of red (purple) onion
    10g of garlic
    1tbsp - Japanese Mirin
    1tbsp - Golden cooking wine (vino seco)
    1tbsp of dried parsley
    Salt and black/red pepper to taste

Directions

Defrost shrimp (if frozen) put in a small bowl and add Mirin and the golden cooking wine. Add some black and red pepper. Cover, and set in the fridge for about an hour to marinate.

Cut up green and red peppers, onion, and garlic. Place all the veggies in a separate bowl and sprinkle parsley on top. Cover and set aside until ready to start cooking.

On med-high heat, place a skillet and spray with even coat of cooking spray. Once hot, place veggies and stir until they begin to wilt. Add in shrimp and marinade and stir often to prevent sticking.

Once shrimp is pink and starts to brown, place over a bed of rice or spinach and enjoy.
