Ingredients

    Ingredients:
    *Bob's Red Mill Organic Farro, 1 serving (remove)
    *Large Raw Shrimp, broiled (1 serving = 4 ozs or 7/8 shrimp), 3 oz (remove)
    *Arugala, 2 cups raw =1 serving, 1 serving (remove)
    *beans, green (fresh), 0.5 cup (remove)
    *Always Fresh Minced Garlic, 2 tsp (remove)
    *(F) Lemon, fresh, 1 oz (remove)
    *Pepper, Bell fresh (Green, Red, Yellow or Orange) 1/2 a pepper, 1 serving (remove)
    *1 Tbs. chpped fresh mint, 2 serving (remove)
    *fresh onion, 0.5 cup (remove)

Tips

VERY tasty!


Directions

1. Simmer Farro in 3 cups water for 40 minutes.
2. Prep (cut Up) vegetables (Green beans-Bell pepper-Mince garlic-Heat on med heat for 7-8 mins. Season w/ salt & pepper. set aside.
3. Cut up mint leaves- zest lemon & cut & juice lemon. Cut up shallots.
4. Cook shrimp in same skillet as beggies were in.
5. Make shallot citronelle- whisk shallots, lemon juice & zest, salt & pepper & 2 tbsp. olive oil.
6. When farro is ready, toss everything tofether.
7. Serve over arugala.
