Ingredients

    All Natural Uncured Turkey Bacon - 2 slices
    Onions, raw, 1 medium, chopped
    Zucchini, 14 oz, sliced
    Red Ripe Tomatoes, 2 cup, chopped
    Ground beef, extra lean (15% fat) 12 oz
    *Peppers, sweet, red, fresh, 0.5 medium, chopped
    Mushrooms, fresh, 12oz, chopped
    Oregano, ground, 1/3 tsp
    Basil, pinch dried, 1 Tbsp fresh chopped
    Pecorino Romano, 4 tbsp grated

Tips

In a pinch, I also have made this with pasta sauce… I do like the tomatoes better than using the sauce though.
You can also use ground chicken, turkey or chicken sausage meat...


Directions

Coarsely chop bacon. Over high heat, brown bacon in a non-stick skillet just until done, but not real crisp. Add chopped onion and bell pepper and sauté until tender. Add ground meat, breaking up with spoon as you sauté until meat is no longer pink. Add tomatoes, zucchini, garlic and spices. Stir well. Lower heat to medium, cover and sauté (stirring every few minutes to submerge zucchini below juices) and simmer until zucchini is fully cooked. Top with Romano cheese.
OR
You can cook zucchini just until no longer opaque, place into a greased baking dish, top with cheese and bake for 20 – 30 minutes until zucchini is tender. – I preferred just to do stove top.
