Ingredients

1/2 cup blanched almond flour
1/2 cup sunflower seed flour
1 tablespoon coconut flour
1 tablespoon flax seed meal
1 tablespoon psyllium husks
2 tablespoons butter, chilled
1/4 teaspoon salt
3 eggs, large
1/2 cup shredded sharp cheddar cheese (or your favorite cheese)

Directions
1. In a bowl, with mixer, mix eggs until nice and frothy.
2. In separate bowl, mix all dry ingredients.
3. Cut in the chilled butter into the dry ingredients.
4. Add shredded sharp cheddar cheese.
5. Blend with folk, dry ingredients with eggs and put back into fridge to chill for 20 minutes.
6. After chilling in fridge, remove and in oiled whoopie pie pan or muffin tin, gently spoon out either 8 large or 16 small biscuits.
7. Cook at 400 degrees for 10-15 minutes or a little more if you like them darker.
