Introduction

Not the lowest of carbs but substituting cauliflower for rice cuts it down quite a bit. This is a comfort food that I missed doing low carb so I changed it up to better suit my dietary needs. Ingredients

    1 bag Kroger frozen cauliflower
    1 LB. Johnsonville hot Italian sausage
    1 can Ro Tel original diced tomatoes
    1 can (6 oz.) Kroger tomato paste
    1 medium yellow onion finely diced
    6 green bell peppers
    spices to taste (I use red pepper flakes, garlic powder, black pepper, oregano)
    1 Cup Kroger brand part skim mozzarella shredded cheese.
    1 Cup water

Directions

Preheat oven to 400 degrees.

1)Cut tops off peppers and clean out the seeds. Retain the tops of 2 to 3 peppers to mince for stuffing.

2)place whole bag of cauliflower(still sealed) in microwave for 5 minutes.

3)Brown sausage. I used link sausage and cut it out of the casings. If you can find ground sausage it will save a few minutes.

4)In a small food processor mince onion, retained pepper tops and cauliflower(should be a rice type size).

5)Combine cauliflower, minced pepper, onion, Ro Tel(undrained) & tomato paste. Add spices as desired and combine well.

6)Drain grease from sausage and combine with cauliflower mixture.

7)Place peppers in a glass oven safe dish. Stuff peppers with stuffing equally. Pour approximately 1 cup of water in bottom of casserole dish around the peppers.

8)Bake for 45 minutes. Add mozarella to tops of peppers and bake until melted.

Serving Size: Makes 6 stuffed peppers
