Ingredients

    1 3/4 cups all purpose gluten free flour
    1/4 cup coconut flour
    1/4 cup hazelnut or almond flour
    1/4 cup potato starch
    1 1/5 tsp baking powder
    3/4 tsp sea salt
    1 tsp each of almond and vanilla extracts
    2 TBSP coconut oil
    1 TBSP honey
    2 eggs
    1 cup almond milk
    1 cup water

Tips

Using all purpose gluten free flour is great, because it already has xanthan gum as an ingredient- no need to add more.


Directions

Mix dry ingredients. Mix wet ingredients into the dry ingredients. Heat your griddle for pancakes, and spray with nonstick cooking spray. Makes 8 fairly large pancakes
