Introduction

I got these from Skinny Taste But changed it up a little, I used oat flour ( which I made from Quaker Oats and ground them in my ninja blender), and made them into muffins instead of a loaf. They are sooo good. Ingredients

    11/2 cups of Oat Flour
    1 tsp. Baking Soda
    1/4 Tsp. Salt
    2 Tbsp. Smart Balance Spread (or butter)
    1/2 C Brown Sugar
    1 Egg White
    1 whole Egg
    3 Large over Ripe Bananas
    2 Tbsp. Unsweetened Applesauce
    1 Tsp. Vanilla
    1 C. Fresh Blueberry's

Directions

Measure 1 1/2 cups of uncooked Quaker Oatmeal (Not quick cooking or instant), place in high speed blender and process until flour like. Add to small and add baking soda and salt, mix and set aside.
in a large mixing bowl place remaining ingredients except the blueberry's, and mix well, add the dry ingredients to the wet and mix until just blended, and then fold in the blueberry's. put batter into muffin tin with muffin cups or spray tin with Pam. Bake at 350 for 25 minutes or until inserted tooth pick comes out clean
