Ingredients

    4 oz mozzarella
    1/2 cup ricotta part-skim
    1/2 cup cottage cheese small curd fat free
    1 tbsp reduced fat parmesan
    3 egg whites
    1 package frozen spinach thawed/drained

    2 tsp olive oil
    1 lb ground turkey
    1 cup onion chopped
    1/4 cup celery chopped
    1/4 cup bell pepper chopped
    1/4 cup fresh mushrooms chopped
    1 tbsp minced garlic
    seasonings to taste

    1 cup ragu
    1 cup tomato sauce

    1 package whole wheat lasagna

Directions

* Mix first 6 ingedients together and set aside in fridge..

*Heat olive oil in large skillet, saute next6 ingedients until limpand turkey is cooked well.
Add ragu and tomato sauce and season to your taste.* Allow to simmer as you cook lasange according to package directions.

*In baking dish put 1 cup tomato sauce mix, layer lasange lengthwise over sauce.Repeat layers of tomato sauce, cheese filling and lasagna. Top with remaining sauce, sprinkle with mozzarella cheese.

*Cover with foil. Bake at 350 degrees for 45 min.
*Uncover and bake an additional 10 min. Let stand 10 min before cutting.

    Great recipe base. We used carrots instead of mushrooms and made a homemade tomato sauce. Got a chld who hates vegetables to eat this and they loved it. - 7/12/10
