Cauliflower Casserole Cauliflower Casserole
Number of Servings: 4


    whole head Cauliflower or frozen 2 cups, chopped 1 inch flowets

    1 cup shredded chedder cheese

    4 tbsp of lowfat mayo

    1 tsp salt


cook cauliflower in 1inch of water with salt. Steam until tender, about 10 mins on medium high heat.
Stir together cheese and mayo. Drain Cauliflower and place in a casserole dish. Spread cheese mixer over top of Cauliflower. Bake in a 350 degree oven for about 20 mins. Until cheese is melted and slightly browned.
Serving 4 half cup

    I love this recipe! I use it all the time.
    When I make it I add onions, and kale to the cauliflower.

    I use low-fat cheese and "lighter than light" mayo, so I end up with just a little more than half the calories and fat (carbs and protein pretty much stay the same). - 4/15/11

  • Really really good. I added some chopped onion and about a tbsp of dijon mustard to the mix. Good way to get some fat and veggies in... I tend to always be low on fat. - 11/19/08

  • I made this recipe this evening for my husband and myself. We both loved it! I did use 75% reduced fat Cabot cheese instead of the Cheddar. It saved 50 calories and 7 grams of fat per serving. I will definitely make it again! - 11/17/08
