Introduction

Number of Servings: 12

Ingredients

    1+ 3/4 cups plain flour
    1 tspn baking soda
    1 cup castor sugar
    1/4 cup cocoa
    100 g butter (or 120 g applesauce)
    1 cup yogurt (vanilla, strawberry, banana or chocolate)
    1/2 cup of milk, low fat or skim
    1 egg (or 2 egg whites)
    1/2 tsp vanilla essence
    1/4 cup chocolate chips

Tips

You can use plain yogurt but a flavoured one, as the ones I suggested in the list, makes a great difference to the taste. When I use chocolate yogurt I often add rum essence to the batter.
You may want to alter the fat content (i.e. 2 egg whites in place of 1 whole egg), but first time you make them, please make them as is now and compare.


Directions

Sift the first 4 ingredients into a bowl and mix well to combine. Melt the butter in the microwave, add yogurt, milk, egg and essence and whisk well to combine. Pour the wet ingredients into the dry ingredients. Mix with a spatula just until you can't see dry ingredients, DO NOT OVERMIX. Put batter into a 12 whole muffin pan and sprinkle with choco chips. bake at 200C for 10-12 minutes.
