Ingredients

    *Ground Beef 93% Lean, 5 oz
    Onions, raw, 1/2, chopped
    Green Peppers 1 tbsp
    Garlic, 1 clove
    basil
    oregano
    salt and pepper to taste
    more garlic if you like
    any herbs that you like

    Tomato Sauce, .75 cup
    Cottage Cheese, 2% Milkfat, 1 cup
    *Macaroni, dry, enriched, 8 oz
    Cheddar or Colby Cheese, Low Fat, 3 oz

Directions

Put your macaroni on the stove and boil til soft

while it is cooking brown your meat, onion, garlic and bell pepper in 2 tsp of olive oil in non stick pan. When meat is cooked add a large can of tomato sauce and your herbs, salt and pepper to taste.

Then mix the sauce/meat together with drained macaroni and the low fat cottage cheese. Place in casserole dish and sprinkle grated jack, cheddar or mozzerella over the top and bake til bubbly and cheese is melted. Bake at 375.

1/5 of this recipe is only about 300 calories and is a very good size portion. I hope it is a good size serving for that amount. But not bad for a dinner with a little salad added on it is a great meal.

I used 1 large can of tomato sauce and the sauce was very thick. You could add some regular tomatoes to thin it out some but I added in about a 1/3 can of water to thin it out.
