Ingredients

    1/2 lb cooked, peeled and cooled shrimp
    2 Tbsp light mayonnaise
    2 medium stalks celery or celery hearts chopped
    1/4 cup minced onion (sautéed for a more subtle flavor) or raw if you're in a hurry
    1 tbsp lemon juice
    1/4 cup chopped parsley

    4 hoagie or New England-style hot dog rolls

Directions

mix all ingredients and chill until time to serve. If you want to make a shrimp roll, toast either side of you choice of bun and then load with the salad; other side serve on a bed of lettuce
