Ingredients

    barley, 1/2 cup
    water 16 cups
    oil, 2 T
    onion, 1 large
    carrot, 3 medium
    potato, 1 large
    celery, 1 cup
    seaweed, 2 individual seaweed snacks
    thyme, rosmary and chicken powder to taste

Tips

if you use chicken stock with salt in it from the beginning, the barley will be less soft. I like it soft, the soup has a nice texture like that
If I had other seaweed I would use bulk seaweed of whatever I had.
The large amount of water will boil down considerably, add more as that happens if you like it to be thinner.


Directions

cook barley in water for 1 hour and 15 minutes
in a separate pan cook onion, carrot and celery in oil until soft, do not brown
add the cooked vegetables, potato and seasoning, and chicken powder
cook for about 45 minutes
