Ingredients

    Butter, unsalted, .5 cup
    Flour, white, 1 cup
    Granulated Sugar, 2 cup - divided
    Baking powder 2 tablespoons
    Pinch of salt
    Milk, 1%, 1 cup
    4 cups Fresh Peaches sliced, about 7 large (2-3/4")
    1 tablespoon of lemon juice
    Ground cinnamon or nutmeg (optional)

Tips

Melt the butter in the dish. Pour in the batter and peaches. DO NOT STIR. Butter will come to the top, peaches go to the bottom. Everything cooks to a beautiful golden brown. Nothing about this recipe is "diet friendly" but my wife made this for dessert after we had grilled salmon with grilled asparagus and a salad and I had a 2/3 cup portion. I had extra calories left over for the day and this cobbler was just the right item to tp off an wonderfully light meal.


Directions

Melt butter in 9x13 baking dish
Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened.
Pour batter over the butter DO NOT STIR.
Bring the remaining one cup of sugar, peaches, and lemon juice to a boil over high heat, stirring constantly, pour over batter, DO NOT STIR, Sprinkle with cinnamon or nutmeg if desired.

Bake at 375 degrees for 40 to 45 minutes until golden brown. Serve cobbler warm or cool.

Serving Size: Makes 8 one cup servings

    I made this today. I did not have enough peaches so I added a very ripe mango......made it wonderful. Great fruits used together. - 5/6/20
