Introduction

This is a modification of a basic waffle recipe. Grind the oats, rice, and chia seeds in separate batches a processor or coffee grinder to create flours. Ingredients

    1.5 cups Kefir
    3 Tbl oil/butter
    2 eggs
    0.5 cup oat flour
    0.5 cup rice flour
    0.5 cup wheat flour
    1 Tbl ground chia seeds
    1 tsp baking powder
    1 tsp baking soda
    1 tsp raw sugar
    0.25 tsp salt

Tips

Create your own flour combinations.
If using milk instead of kefir or yogurt, use 2 tsp baking powder and eliminate baking soda.


Directions

Combine eggs, kefir, and oil/butter in a batter bowl. Whisk thoroughly. In a separate bowl combine dry ingredients. Stir dry mix into liquids. Whisk until smooth. Batter will seem gritty and fairly thick. Pour about 1/2 cup of batter onto greased, pre-heated waffle iron, lower lid of waffle iron and cook until no more steam, about 4 minutes.

Serving Size: makes 6 large round regular waffles
