Introduction

Ingredients

1 cup medjool or other soft dates, pitted
1 cup cashews
1 tsp lemon juice (opt)
pinch sea salt (opt)
Directions
1. In a food processor or blender, chop the cashews until most of them are very fine (leave some chunks - it gives the bars great texture!). Set aside.
2. In a bowl, use a spoon to mash the dates into a paste (if you're using dried dates you'll need to soak them first).
3. Add the cashews, lemon juice, and salt (if using), and mix together well.
4. On a cutting board, form the mixture into a long log, and flatten the top and sides a bit. Cut into 7 even pieces.
If you want to, you can refrigerate them individually wrapped so they're easy to grab n' go!
