Ingredients

    2 pkg frozen chopped spinach, thawed
    2 egg whites
    1/4 C egg substitute (equal to 1 egg)
    3 T flour
    1 T margarine (fat free or vegan/vegetarian)
    1 C milk (almond breeze unsweetened)
    1 sm onion, chopped
    salt
    pepper

Directions

Squeeze the moisture out of the spinach and put it in a casserole dish. Mix the flour and milk separately, and pour over the spinach. Add the remaining ingredients and stir until completely combined. Cook at 375 for 30 minutes.

    Very Good
    Use 1/2 c. egg beaters in place of egg whites, etc,. Imaddes some parnesean cheese mxed in & sprinkled some cheddar cheese on top. (also next time will use GF tapioca ). Very tasty - 11/21/12
