    1/2 cup Buckwheat flour
    2 tbl Coconut flour
    2 tsp Baking powder
    1/2 cup Natvia/truvia
    1 Egg yolk
    3/4 cup Almond milk
    2 small Bananas (mashed)
    3 Egg whites


Fold in blueberries or chocolate chips before baking for added sweetness!


1. Preheat the oven to 160C/320F. Place the egg yolk, milk and banana in a bowl and whisk.
2. Add the baking powder and flours, and stir to combine.
3. Whip the egg whites in a separate bowl until stiff.
4. Spoon the banana mixture into the egg whites and whisk until just combined.
5. Spoon into a non stick pan and bake for 50 minutes or until springy.

Serving Size: Makes 7 inch round cake
