Introduction

I use these simple egg muffins to help get some veggies into my diet when I eat breakfast or for my protein snacks. I use these simple egg muffins to help get some veggies into my diet when I eat breakfast or for my protein snacks.
Number of Servings: 1

Ingredients

    1T chopped onion
    2 T chopped sweet peppers
    1/4 c chopped mushrooms
    1T Hormel real bacon bits (can be omitted for vegetarians)
    1/2 c liquid egg whites

    You can sub your favorite veggies though, have fun with the mix.

Tips

You can add any veggies you want to these like broccoli, asparagus, zucchini, etc.


Directions

Either buy your veggies pre-chopped or chop them yourself. I use pre chopped onion and bottled bacon bits (which can be omitted for vegetarians.) I usually multiply by 6 and use a large 6 cup muffin tin. Add ingredients to each cup, this should completely fill the cup. Pre-heat oven at 350 degrees. Bake for 25-30 minutes. These are good to make ahead and freeze or just for the week to warm up. Just need microwaved for about 60-90 seconds.

Serving Size: recipe makes 1 muffin but can be multiplied
