Introduction

Number of Servings: 6

Ingredients

    1 lb Ground Turkey
    4 tsp Garlic
    1 small Onions, chopped or diced
    1 can of Corn, drained
    2 cans cannelini or other white beans, drained and rinsed
    1 -4oz can of Diced green chiles, rained and rinsed
    2 small Tomatillos, chopped
    4 cups Chicken Broth
    1/8 tsp black pepper
    1 TB cumin
    1 TB crushed oregano

Directions

1. Add turkey,to dutch oven and cook over medium-high heat until browned, then drain fat.

2. Add onion and garlic and cook, stirring occasionally, until vegetables begin to soften.

3. Add remaining ingredients (corn through oregano) and bring to a boil. Cook for about 10 minutes, then reduce heat, cover, and simmer for at least 20 minutes to let the flavors blend.

NOTES: The longer you simmer, the better the flavors will blend.

You can also turn this into a slow cooker recipe: follow steps #1 and 2 above, then place everything in a slow cooker and cook on low for 4-6 hours.

Makes 6 servings of hearty, healthy chili!
