Ingredients

    8 oz Ground beef, lean
    2 Tbsp Coconut Oil
    1 package (8 oz) fresh Mushrooms, sliced
    1 package (6 oz) Spinach, fresh
    12 large Egg, fresh, whole, raw
    0.25 tsp Garlic salt
    0.5 tsp Pepper, black
    Coconut Cooking Spray

Directions

  Preheat oven to 400°F. Heat oil in a large
skillet over medium heat. Add ground beef and
mushrooms; cook 5 minutes or until browned,
stirring frequently. Add spinach; cook 2 minutes
or until wilted. Remove beef mixture from pan.
Whisk together eggs, garlic salt and pepper in a
large bowl. Stir in beef mixture. Pour into a 9-x
9-inch baking dish coated with cooking spray.
Bake 20 to 25 minutes or until center is set. Cut
into squares to serve.
